A Lazy Lunch at Rydges Beach Resort

If you enjoy leisurely lunches followed by a few hours by the pool - and who doesn't? - Rydges Beach Resort in Cherng Talay is hard to beat.
 

The resort lies at the southernmost end of Bang Tao Lagoon, and has been recently refurbished in a colonial style. Large verandas and venetian blinds predominate, and the soft pastel shades on the walls contrast beautifully with the polished wooden floors. It's a large hotel, but that's in no way obvious as you stroll across the well-manicured lawns to the beachside Thai Seafood Restaurant.

Head chef Khun Amnart has been whipping up Thai seafood specialties at the restaurant for the last four years. He follows a traditional style, incorporating flourishes of Royal Thai cuisine. His presentation is immaculate; fruit and vegetables are delicately carved into flower and leaf shapes, and food is served neatly packaged in banana leaves.

On this occasion, the beef in green curry with coconut had a suitably sharp bite to offset the cream of the coconut and the chicken satay was perfectly zesty. However, given that the ocean was merely metres away and waves could be heard crashing on the shore, it was the seafood that we'd really come to sample. We weren't disappointed. The deep-fried whole sea bass with pepper dipping sauce was meaty and crisp, and the fish cakes were succulent and refreshing. The grilled giant shrimps with a piquant garlic dipping sauce were equally good. There are a host of places on the island where you can enjoy excellent Thai food. What makes Rydges one of the best is the location, relaxed atmosphere and convivial staff.

After lunch, visitors are invited to take a dip in the sea, relax by the side of one of Rydges' two large pools or make use of the services of one of the on-site masseurs.

As we relaxed in the shade beside the pool for the remainder of the afternoon, we gradually worked up an appetite for a Cherng Talay dinner.
